How To Plan Your Christmas Party

Remember, the holiday is to be enjoyed... stress free. Be simple, with good taste and do as much as you can in advance, so when the holidays come it not much what you have to do and... get help, do not try to do everything yourself.

1. Create a check list, three weeks in advance, and write backward from the holiday day, what you can do everyday o every week, what chores can be done three, two and one week before, even a few days before Christmas day.

2. Three weeks before send your invitation to your family and friends, and ask them to confirm at least two weeks before their assistance.
Think about your table setting, are you going to use the traditional red and green, or the sophisticated gold and silver, or are you going for something more updated as blue, shades of green, fuchsia... this is a good time to decide. So you will have the time to check what you have already at home or get ready to look for new decoration item in the stores. If you do not want to spend too much money for decoration, keep it simple, a bed of fresh-snipped greens is more modern than a table runner, you can also add inexpensive grasses with a color or white candles inside, decorate with group of Christmas ball, the same that you use for your Christmas tree. You also can create a jolly napkin ring, simply tread a jingle bell onto a piece of ribbon, wrap around the napkin and knot and add a name tag.

3. Two weeks before, decide your Christmas menu -by now you should know who is attending your dinner-, traditional or with flavor from other countries. Remember that is impossible to make everything, so get from the super market cookies, bread, cake or anything that other people can make for you. This will make your week stress free. Think about the trays where you plan to serve the food and get them.

6. Two days before, clean the house, and all the social areas where your guests may go around. Wash and dry cutlery, glasses and serving plates or trays. Set up the bar area.

One day before, finish making any grocery that you need. Marinate the meat. If you are making cooked salad, boil and cut the carrots, potato and put in the refrigerator. Prepare the cake, cookies or purchase them. Make any food that can hold until the party start. Set the table, table cloth, napkings, table runner, Make the place card.

Dinner day, early in the day, purchase the ice, enough to chill the drink and to use with the soft drink and drinks, you can never have to much ice. Use a laundry tub or the children wadding pool to contained or any fancy container to keep the drinks cold. Finish cooking as much as you can, try to cook every thing at least two hours before any one arrives, so you will have time to be ready by the time your guests come.

Plate whatever food you can in advance and cover with foil. Set the table with the plates, cutlery, napkin and the place card. In the social area, plate the finger food and the wine, make sure that the drinks are close by. So your guests can help themselves. You may offer them drinks the first time.

When you are ready to have dinner, do not doubt to ask for help to bring the food to the table. Most important that all is that you enjoy the night as your guests do. However, if you hire a Marquee for your daughter or sons Wedding and the Marquee that you have hired is not of the standard you expected or were promised then it is a bigger problem to solve, if at all.

People might invite you to their home or to go out with them for the evening. They might invite you when they see you or by telephone. However, it is still quite common to be invited by letter or by invitation card. The invitation will tell you what the occasion is, when it is and, occasionally, what you should wear!

Reply quickly. If the occasion is small then you can reply by telephone, but if it is a big occasion it is better to reply by letter. It is kinder to do this because it helps your host to remember and to organize things. If the invitation was by formal invitation then you might like to reply in a formal way.

In Britain, it is common to be invited to someone's home rather than to a restaurant. If you are invited to a restaurant, it is because your host is very busy, cannot cook very well, or wants to give you the enjoyment of some special type of good, or perhaps often invited you home and now wants to give you a special treat!

Business visitors from other countries are often invited to their British colleagues' home, however, sometimes it may be more convenient to invite a business colleague to a restaurant.

If you are invited to someone's home to have a meal, it is usual to take some flowers or a box of chocolates. It is not usual to take a bottle of wine unless you know your host well. Although flowers and chocolate are quite acceptable, it would be very nice if you could take something from your country.

I Should Have Been a Vegetarian

I was talking to a friend today and telling her about the first time I ever decided to have Thanksgiving at my house. I had invited thirty people for dinner and before I go any further, in the spirit of honesty, I have to admit that I'm a terrible cook. That said, it was sheer stupidity for me to invite a houseful of guests when I didn't know how to cook a turkey.

But it gets worse. The night before Thanksgiving, I put out bridge tables that went from one end of the house to the other and I put huge bed boards on each table to extend the seating capacity and covered them with beautiful hand embroidered tablecloths that had been passed down from one generation to another. The place settings were neatly aligned and my grandmother's crystal serving pieces sparkled on the tables.

The doorbell rang and when I went to answer it, there was this delivery guy from the flower shop looking all the worse for wear and tear. He handed me a gorgeous floral table arrangement and when I read the card it was from a friend who couldn't join us. The card said, "Sorry I can't be there with you but have a Happy Turkey Day."

I said, "Oh, my God. I forgot to defrost the turkey."

Anyone who has ever cooked a huge turkey to feed thirty people can appreciate how all the blood drained out of my face and my heart rate sped up so high I thought I was going to pass out when I realized that I had nothing to serve my company unless we had a miracle.

My miracle was my mother. In her calmest voice she told me to get the turkey out of the freezer and put it under cold running water. This was in the days before microwaves were invented and it seemed an impossible task that this huge frozen bird would ever be soft enough to eat.

I stayed up all night, rotating the bird under the cold running water; I only had a double sink and that meant the turkey couldn't be submerged up to its scrawny, stiff neck. I had to keep turning it. Or so I told myself.

The next morning I put the turkey in the oven. It felt soft enough to cook. My guests arrived. I put on my bravest smile and proceeded to serve everyone.

Aaaarrrrggghhh!!!! The insides were raw. The outside looked brown and edible but when it was carved, I could see the knife getting stuck inside. No hope. My guests were starved and I didn't know what to do.

Fortunately, there was someone at the table who suggested that we carve the turkey into smaller pieces and put them back into the oven at a higher temperature to cook faster. That worked. Almost.

In the years since that culinary disaster I learned a wonderful secret. For the first course, serve a huge Caesar salad with all the trimmings and French garlic bread that has been warmed in the oven and is golden brown and smells delicious. For the last course, serve a mouth-watering dessert and coffee with either Alka Seltzer or Bromo Seltzer on the side. And finally, hope that no one remembers what you served in between the first course and the last course.

What Pool Table Furniture Did We Choose, and Why?

We opted for a stand-alone pub table and chairs combination, and a second half-moon pub table set that we could mount to the wall. These two sets included 2 chairs each, giving us 4 total chairs for guests.

We also sprang for one of the leather-topped benches. I particularly liked that the bench came with additional storage. The bench provided seating for 3 additional guests.

One other piece that we decided we need to complete our game room was a pool cue rack. We chose one that mounted to the wall, clearing up more floor space. (When you have little kids over, it helps to have as much off the floor as possible to avoid any accidents!)

I really liked that we could add quite a bit of seating with this pool table furniture and make the room look more like a pub. The room is in our basement, and the lighting is a little darker anyway, so it just made sense to go with a "pub-like" ambiance.

We spent a little more than maybe most would - about $2000 all told, but I am thrilled with how our game room looks.

I am especially thrilled with the fact that guests can come over and relax. I notice that friends are coming over more often now!

How To Plan Your Christmas Party

One of the most popular tradition during Christmas is getting together for dinner with family and friends at a well decorate table, with delicious food typical for the season. The food that we prepare for this dinner usually demand a lot of work, not only for the type of food but also for the variety and the amount.

Here, I will give you some tips to plan your Christmas dinner and avoid the hassle during the Christmas day so you can enjoy together with your guests and family no only the food but the night with them.

Remember, the holiday is to be enjoyed... stress free. Be simple, with good taste and do as much as you can in advance, so when the holidays come it not much what you have to do and... get help, do not try to do everything yourself.

1. Create a check list, three weeks in advance, and write backward from the holiday day, what you can do everyday o every week, what chores can be done three, two and one week before, even a few days before Christmas day.

2. Three weeks before send your invitation to your family and friends, and ask them to confirm at least two weeks before their assistance.
Think about your table setting, are you going to use the traditional red and green, or the sophisticated gold and silver, or are you going for something more updated as blue, shades of green, fuchsia... this is a good time to decide. So you will have the time to check what you have already at home or get ready to look for new decoration item in the stores. If you do not want to spend too much money for decoration, keep it simple, a bed of fresh-snipped greens is more modern than a table runner, you can also add inexpensive grasses with a color or white candles inside, decorate with group of Christmas ball, the same that you use for your Christmas tree. Think about the trays where you plan to serve the food and get them.

6. Two days before, clean the house, and all the social areas where your guests may go around. Wash and dry cutlery, glasses and serving plates or trays. Set up the bar area.

One day before, finish making any grocery that you need. Marinate the meat. If you are making cooked salad, boil and cut the carrots, potato and put in the refrigerator. Prepare the cake, cookies or purchase them. Make any food that can hold until the party start. Set the table, table cloth, napkings, table runner, Make the place card.

Dinner day, early in the day, purchase the ice, enough to chill the drink and to use with the soft drink and drinks, you can never have to much ice. Use a laundry tub or the children wadding pool to contained or any fancy container to keep the drinks cold. Finish cooking as much as you can, try to cook every thing at least two hours before any one arrives, so you will have time to be ready by the time your guests come.

Plate whatever food you can in advance and cover with foil. Set the table with the plates, cutlery, napkin and the place card. In the social area, plate the finger food and the wine, make sure that the drinks are close by. So your guests can help themselves. You may offer them drinks the first time.

2 oz. Light rum
2 oz. pineapple juice
2 oz. Orange juice
1 oz. cranberry juice
½ oz. grenadine
1 oz. dark rum
½ oz triple sec

Blend all ingredients together and pour over ice in a tall glass. Serve with a pineapple slice on the rim of the glass.

Appetizers

Shrimp-Pineapple Pupus are easy and tasty? Here's the recipe.

Shrimp-Pineapple Pupus

24 large or colossal shrimp, cooked, tail off
24 Dole Pineapple chunks (reserve liquid)
1/2 cup brown sugar
2 Tbsp soy sauce
1/4 cup Heinz Chili Sauce
Colorful food picks

Spear one cooked shrimp and one pineapple chunk on each food pick, with the pineapple atop the shrimp. Cover and chill until ready to serve. Combine the remaining ingredients, mix well and serve as a dipping sauce.

Luaus are not formal affairs. A healthy and delicious appetizer is fresh fruit. And it can double as a decoration. Here's how:

Halve a pineapple and cut out the inside.
Cut the pineapple into cubes and spear them on toothpicks.
Then top each pineapple spear with a maraschino cherry.
Turn the pineapple "shell" halves upside down and decorate with the speared pineapple and cherries.
Surround the pineapple with tropical fruits of your choice. Cut kiwis, mango, and melon look great!

Main Dish and Sides

If you've been to a luau in Hawaii you've had Kalua pork. That's a whole pig that's wrapped in banana leaves and roasted underground for hours and hours. If you're not that ambitious here is an easy recipe that doesn't require a shovel.

Kalua Pig

Makes 12-14 servings

5-6 pound pork butt roast

1 1/2 tablespoons Hawaiian sea salt (coarse sea salt)

1 1/2 tablespoons liquid smoke flavoring

Pierce the pork roast all over with the tip of a sharp knife. Place the roast in a 6 quart slow cooker and rub the salt all over the meat. Drizzle the liquid smoke over the meat.
Cook with the cover for 16-20 hours on low heat. Turn the roast over one time after about 8 hours. When the meat easily shreds with a fork it is ready.
Remove the meat from the slow cooker and shred with two forks. Add drippings from the slow cooker as needed to moisten the meat.

Fried Rice is a perfect and traditional luau accompaniment to serve with the Kalua Pig. And if you really want to make it reminiscent of Hawaii, add a little crushed pineapple to the finished dish. A salad would be a great addition to this meal. Garnish is with flowers like nasturtiums or orchids.

Quick Fried Rice

2 to 3 tbsp vegetable oil

1 cup diced chicken, ham or shrimp

6 cups steamed rice

1 to 1-1/2 cups diced cooked vegetables (peas, carrots, water chestnuts, etc.)

2 to 3 tsp soy sauce

1-1/2 tsp sesame oil

1/2 to 1 tsp salt, to taste

3 eggs, beaten

4 tbsp thinly sliced green onion or 1/2 cup of crushed pineapple

Heat oil in large skillet or wok.
Sauté meat for 30 seconds on high heat and remove from the pan.
Cook beaten eggs and stir they scramble into small pieces and remove from pan.
Return meat to pan and add rice.
Reduce heat to medium and cook approximately 2 minutes, stirring constantly.
Stir in vegetables, soy sauce, sesame oil, salt and cooked eggs.
Cook 2 additional minutes.
Sprinkle with green onions or crushed pineapple as a garnish.

And the best is last: Dessert

Here's a dessert that you will love! It's not hard to make and it's a lot of fun.

Volcano Cake

1 cake mix - any flavor - mix as directed on the box

Grease and flour a medium sized round metal mixing bowl - about 2 quart size (or any oven-proof round bowl.)
Mix and bake the cake mix as directed. Keep an eye on it. Baking times will differ, depending on the brand you use and the exact size of the bowl.
Test the cake with a toothpick. When it's done the toothpick will come out clean.
Cool in the bowl for ten minutes and then unmold the cake on a cookie sheet.
Cut or scoop a cup or so of cake out of the top of the cake to give it that authentic volcano look!

Meringue:

Preheat the oven to 425 degrees

8 egg whites

1/8 teaspoon cream of tartar

1/8 teaspoon salt

1 cup white sugar

Beat the egg whites with the remaining ingredients until stiff peaks form.
Frost the cake with meringue, leaving a depression in the center of the cake. Make sure that the depression is covered with some meringue. Have fun making swirls and points with the meringue!
Return the cake to the oven for 8 to 10 minutes or until the meringue is lightly browned.
Remove the cake from the oven and cool.
Transfer it to a big cake board (heavy cardboard) that you've covered with foil or pretty paper.
Decorate the cake board with luau "finds" - more paper umbrellas, seashells, fruit - use your imagination!

Lava: (Yes, lava)

A bag of frozen sweetened raspberries of strawberries. If you can't find sweetened you can add some sugar to taste.

Let the fruit thaw and whirl it in a blender to liquefy.
Just before serving, pour the lava down the sides of the cake.
Put a few sparklers in the top of the cake and light! Voila! Instant, and delicious, volcano!
